When I talk about liking unusual salads, this is the kind of thing that I’m talking about.
Just think about it. Roasted cauliflower and chickpeas. A simple, make-ahead creamy dressing. Maybe a sweet addition like raisons, if they are your thing. I don’t know what it is, but beets and goat cheese play so nicely off each other. And, in a winter salad, they just make sense.

Kale is a cousin of spinach, and much, much more sturdy.
Don’t get me wrong. I love spinach. It’s just less forgiving than kale is. Kale is thick. It’s chewy. It doesn’t wilt in the same way as spinach or other leafy greens. And, this salad does it justice. It’s super healthy, bright and fresh with citrus flavors. Plus, you can omit ingredients that don’t appeal to you (looking at you, anchovies). Top with salty cheese, and this kale salad is among perfect winter salads for your bridal shower.

QUINOA SALAD WITH ROASTED SQUASH, DRIED CRANBERRIES, AND PECANS
Do you like quinoa? I sure do. It’s packed with fiber, protein, and has a really pleasant flavor to it. Plus, it pairs well with so many other ingredients.
For this quinoa salad, the key to making it pop is to add roasted squash to it. The squash will be kind of sweet, and also add a creamy element to the salad. Top with crunchy pecans, dried cranberries, and salty feta. Mix with kale, and add some aged balsamic vinegar for a punch.
